Rich Banana Bread

I made this on Monday and it's soooo good! A cake usually lasts a long time at our house, but bbwoof ate the last of this one at lunch today. It uses cream cheese instead of butter, which makes it very rich and gives it a nice tangy taste too. I'm saving the recipe here for future use, feel free to try it yourselves. (Adapted from Your Guide to Southern Cuisine.)

Rich Banana Bread

  • 1 cup granulated sugar

  • 1 package (8 ounces) cream cheese, room temperature

  • 3 ripe bananas, mashed (about 1 cup mashed)

  • 2 eggs

  • 1 teaspoon vanilla extract

  • 2 cups baking mix (Bisquick, Jiffy, Pioneer, etc.)

  • 1/2 cup chocolate chips

Preheat oven to 350°; grease a 9x5x3 inch loaf pan.
In a large mixing bowl, cream sugar with cream cheese until light and fluffy.
Beat in mashed bananas, eggs, and vanilla.
Add baking mix and chocolate chips (you could used 1/2 cup chopped nuts instead), stir just until ingredients are moistened.
Pour into greased 9x5x3-inch loaf pan.
Bake banana bread at 350° for 1 hour, or until wooden pick comes out clean when inserted in center. (Cover with foil the last 15 minutes of baking if it's getting too brown.)
Cool before slicing.
